Recipe: Healthy Smoked Salmon Burgers
Ingredients:
- 500g Jollys of Orkney Smoked Salmon
- 2 tablespoons Dijon mustard
- 1 large egg, lightly beaten
- 2 tablespoons fresh dill, chopped, plus extra for garnish
- Zest of 1 lemon
- 50g breadcrumbs
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 4 brioche buns, split and toasted

Prepare the Salmon Mixture: Combine the Orkney Smoked Salmon in a food processor. Pulse until the mixture is finely chopped but not pureed.
Transfer the salmon mixture to a large bowl. Add the Dijon mustard, beaten egg, chopped dill, lemon zest, breadcrumbs, salt, and pepper. Gently mix until well combined. Form the Burgers: Divide the salmon mixture into 4 equal portions.
Shape each portion into a patty about 2cm thick. Place the patties on a plate, cover, and chill in the refrigerator for at least 30 minutes to firm up. - Cook the Burgers: Heat the olive oil in a large frying pan over medium heat. Carefully place the salmon patties in the pan. Cook for 4 to 5 minutes on each side until golden brown and cooked through.
- Assemble the Burgers: Place a lettuce leaf on the bottom half of each toasted brioche bun. Add a salmon burger on top of the lettuce. Add slices of tomato and red onion. Spread tartare sauce or mayonnaise on the top half of the bun and garnish with a sprig of dill.
- Serving: Serve the burgers immediately, accompanied by side dishes such as sweet potato fries or a fresh salad.
