Hatston, in Kirkwall, is home to the Jollys of Orkney shop, head office, and the fish factory.
At the Jollys shop in Hatston, we bring together a diverse selection of the island's finest offerings. From fresh and smoked fish which has been prepared in our factory, to handmade Orkney fudge, biscuits, oatcakes, cheeses, and an array of extra's, our shop celebrates the rich flavours of our community. We also cater for hungry workers of Orkney, serving hot and cold food with some of Orkney's finest ingredients
At the Jollys factory, we take pride in processing and delivering the highest quality seafood. In the factory we process all of our fish and shellfish for shops, hotels and restaurants, supplying Orkney with some of the finest fresh produce from the island. This is also where we process all of the mail order deliveries, preparing and sending out our lovely Orkney Hampers everywhere across the UK.
Alongside working as a fishmongers, the factory team are responsible for producing our award winning smoked salmon. Every salmon is processed, cured to our specific recipe, and smoked in our traditional kiln over oak chippings to produce a truly authentic product. Each side is then sliced by hand, producing a beautifully thin, tender product, delicate in texture and rich in flavour.
