Tammie Norrie Poo Cookies

 

A Tammie Norrie is the Orcadian word for a Puffin, the cute little seabirds that nest in Orkney's sea cliffs each year between April and August. These cookies are made from Tammie Norrie Poo. Well, not actually real poo (eww!) but the yummy yoghurt covered raisins we sell here at Jollys.

These cookies are really easy to make and take just 12 minutes in the oven, making them an ideal recipe for bakers young and old. They're made with oats and brown sugar for a nice gooey texture and sweet taste.

Ingredients:

  • 190g plain flour
  • 1tsp cinnamon (optional)
  • 1tsp baking powder
  • 1tsp salt
  • 230g unsalted butter (softened to room temperature)
  • 200g light or dark brown sugar
  • 100g granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 240g rolled oats
  • 140g bag of Tammie Norrie Poo

Method:

  1. Whisk together the flour, cinnamon, baking powder and salt in a bowl until combined, and then set aside.
  2. In a separate large bowl, use a hand mixer to beat the butter with the brown and granulated sugar until creamed. Then, whisk in the eggs and vanilla extract until combined.
  3. Combine the dry ingredients with the wet ingredients until mixed. Then, gently stir in the oats and Tammie Norrie Poo to great a firm, sticky dough. Cover, and chill in the fridge for at least 30 minutes.
  4. Then, preheat the oven to 350F/180C/160C (fan oven) and line a large baking tray with greaseproof paper.
  5. Take your cookie dough from the fridge and using an ice-cream scoop, dollop up the mix onto the lined baking tray – keeping a gap of about 4 inches between each cookie. (Note: you may need to use more than one baking tray if you have a lot of mixture.)
  6. Transfer the baking tray to the oven and cook the cookies for about 12 minutes until golden. (Remember, all ovens are different and your cookies might cook slower or faster, depending on the heat of your oven. Keep an eye on them and make sure they don't brown – you want them to be soft and gooey in the middle –and they'll continue to cook once they're out of the oven.
  7. Remove from the oven and leave on the tray for 5 minutes before transferring them to a wire rack to cool. 

 

Cookies will stay fresh in a sealed container, at room temperature, for up to a week. Enjoy!
